strawberry, rhubarb, campari jam

sweet, tart, & bitter - all perfectly balanced.

5 cups rhubarb, chopped (fresh or frozen)

2 cups strawberries (fresh or frozen)

2 cups white sugar

1 lemon, juiced (about 1 tablespoon)

1/4 cup Campari liqueur

Combine all ingredients except Campari and simmer on low for one hour. Stir and mash fruit with a wooden spoon throughout cooking, ensuring the bottom does not burn. Add campari and simmer an additional 5 minutes.

Store and enjoy.
