Week 4: Cucumber, lettuce, onion + green onion, peppers, cabbage.

To utilize this weeks share, I made garlic-pork lettuce cups with a creamy cabbage and green onion slaw, mango sambal ‘salsa’ and fried shallots.

  • scallion cabbage slaw

    thinly slice

    1 small cabbage

    5-6 stalks green onion

    mix with

    ½ cup mayo

    2 tablespoons something acidic (lemon juice, vinegar, pickle brine)

  • mango sambal 'salsa'

    dice up the veggies you have. I used:

    2 small peppers, 1 cup cherry tomatoes, 1 cucumber, 1 mango, 1 handful basil , 1 small onion

    for the marinade:

    1/8 cup sambal (or other chili sauce)

    ¼ cup olive oil

    2 tablespoons white wine vinegar

    ¼ cup ginger simple syrup (1/8 cup ginger juice, 1/8 cup sugar, heated until sugar dissolves, then cooled)

    mix it all together!
